We are in the prime of the college football season and Johnsonville is holding a sausage-inspired tailgating recipe contest! If you're an SEC fan this contest is for you! Imagine your recipe getting you invited to the big game! Here are the contest details.
• SEC fans can enter their original tailgating recipe for a chance to win by visiting www.TailgateThrowdownContest.com now through Nov. 5, 2019 at 11:59 p.m. ET. Individuals will be asked to share the name of their recipe and its ingredients, cooking instructions and a photo of the finished dish. • There will be two groups of winners: one (1) Ultimate Fan Favorite and two (2) Finalists. The Ultimate Fan Favorite recipe entry will be determined by a public vote, conducted on www.TailgateThrowdownContest.com between the dates of Nov. 6-15. For captivating fans with their tasty recipe, the Ultimate Fan Favorite will be awarded Johnsonville Sausage for one year (via 12 coupons) and a Sizzling Sausage Grill. • A panel of Johnsonville members (employees) will review contest entries and help choose the two Finalists based on quality, originality, adherence to tailgating theme and visual representation. This the perfect time to share my Cuban spin for your game day tailgate. Johnsonville Brats are the perfect canvas to use for this Cuban inspired yummyness. Here are my Cuban mojo grilled sausages. First the ingredients.
-Perfectly Grilled Johnsonville Brats with Mojo Marinade
- Fresh Bread Rolls
- Caramelized Onions
- Pork Rinds
-Ingredients for the Mojo Marinade
1.5 cups of sour orange juice. If not available you can use 1 cup of orange juice and half a cup of lime juice.
15-20 garlic cloves
1 cup of chopped onion
1 tsp of black peppercorn
2 tsp of powdered Oregano and one sprig of chopped fresh oregano.
2 tsp of Salt
-Ingredient for the Yucca Mojo
6 cloves garlic, finely minced or mashed to a paste with mortar and pestle.
⅔ cup extra-virgin olive oil
Juice from a lime
Salt
Chopped Parsley for color.
MOJO MARINADE:
1. Mash the peppercorn, salt, and garlic with a mortar and pestle until it becomes a paste.
2. Add the juice and powdered oregano to the paste.
3. Combine this mixture with the chopped onion and fresh chopped oregano. Let sit at room temperature for at least an hour before using it.
THE YUCCA:
1. Peel the yucca root and chop it into chunks. If you are using pre-packaged or frozen yucca this is unnecessary.
2. Put the yucca into your pressure cooker and fill it with enough water to cover the yucca. Add salt.
3. Cook for 20 minutes in the pressure cooker. If using a regular pot, bring water to a boil, add the yucca and pinch with a fork occasionally until it is very soft.
4. Remove the yucca from water. Remove the "stems" from the center of the yucca.
THE YUCCA MOJO:
1. Mash garlic cloves into salt and lime juice with mortar and pestle. Once it's combined put it in a container that you can pour from like a Pyrex measuring cup.
2. In a separate saucepan, heat olive oil until bubbling, and then pour over the mashed garlic mixture.
3. Now add the chopped fresh parsley.
4. After about 30 seconds it's ready to be poured over your yucca for serving.
GRILLED JOHNSONVILLE BRATS
1. Soak The Brats in Mojo marinade for at least an hour while refrigerated.
2. Heat the grill and get those brats cooking.
3. Brush the Brats with Mojo marinade while they are on the grill.
Building The Sandwich
Slice your bread in half. Place a grilled brat on both slices of bread. Top with some sliced yuca, caramelized onions, and crumbled pork rinds. Last but not least...enjoy before, during, or after the game!!!!
