It’s 95 degrees in LA and the perfect time for a savory and refreshing cocktail. The Paloma is a drink I discovered 16 years ago when I moved to the west coast and it’s become a favorite of mine on these hot days. Here’s a version of it I love making at home.
2 ounces of Rooster Rojo Reposado Tequila
2 sprigs rosemary
1/2 ounce simple syrup
1 1/2 ounces grapefruit juice
1/2 ounce lime juice
1 ounce grapefruit soda
1/2 teaspoon kosher or cocktail salt for rimming the glass
Directions:
Salt your rim
Fill your salt-rimmed glass with ice.
Add the rosemary and simple syrup to a cocktail shaker (no ice) and muddle until you can smell the rosemary
Add the tequila, grapefruit and lime juices, and ice to the shaker. Shake vigorously for 10-15 seconds and double strain (pour over a mesh strainer) into your ice-filled glass.
Top off with grapefruit soda.
